I’m not a parent but I’m an older sibling that was basically the caretaker since both of my parents were sick/disabled. I don’t know how I did it either
It has its challenges but so rewarding, speaking as a mom.. Who ended up with a son that barely eats anything from restaurants. Except for Domino's he will want everything homemade… So i end up makings pasta and burgers (not my cuisine) and all sorts of rice dishes. My son loves rice.. 😅😅😅😅
Yes it is difficult being a caretaker but i do think you made it difficult for yourself with trying to make a meal that requires a lot of attention at the same time which will lead you to overcook things 😂
My mom always made all the meals for us 5 kids but her meals were simple. Chicken, pork or beef for dinner in all forms, a green veggie, and rice, bread or plain noodles as a side. She used canned veggies and instant rice etc. so most of her attention could go to the main protein
It’s hard but honestly I feel like half the time the part of my brain that feels overwhelmed gets completely turned off once it passes a certain point and just boom autopilot 😅

Do not boil the potatoes all the way it would come out way better if you just directly double fry like raw potatoes

I was lucky enough to have a kid who loved to read. Sit them with a book and I had the time. They are now an independent adult.
