    LOL, I've been using my rice paddle to fold in and knead my bread for YEARS!
    AND at 20 minute intervals, I usually do it at least twice, like they do here.
    I also rarely use oil in my dough, and I add 1/2 of the flour to make a biga, or sponge starter.
    BUT, the folding the dough over and pushing it down IS kneading ….
    which makes your 'No knead' claim a false claim.
