In Trinidad 🇹🇹 we roast eggplant (bagand) on the outdoor stove and roast tomatoes 🍅 after we clean up and stir fry it with onion garlic hot pepper spices and we eat with roti (Pita bread )it is yummy enjoy yr day. Thank You for sharing
