    Once the pressure is released – you don't need to turn the knob to venting to open the pot… not sure why you mentioned that so thought I should as well. Also, you could have mentioned the "wooden spoon" trick to slowly release the pressure for times when you don't want to quick release.. but dont' want to wait 20 minutes for natural release… hook a wooden spoon under the handle so that it just hits the valve and releases a bit of steam at a time… releases the steam over 5-10 mins and is a good alternative to quick release for foods where you just want that extra bit of time.
