No one ever mentions the duo plus. It automatically is on sealing when the lid is closed. I kept looking for how to make sure it was sealing, not venting. ( I know, I know. Duh moment.) it has another knob on top the releases pressure. Then it resets itself when you open then close the lid.
Also, don’t use this to make sweet potato noodles. They get 🤢. Probably due to lack of gluten in the noodle. Otherwise I love my instant pot. I’ve used a stove top type pressure cooker for several years. I like not having to watch pot while it’s cooking. I still use my stovetop cooker for when I can’t use electricity.

Why don’t you use any of the preset buttons like porridge or beans/chili?

We got an instant pot at Christmas and still learning to use it. This channel has been very helpful! I am iron skillet cook for the most part but have used a pressure cooker on numerous occasions and slow cooker even more.
