    We have been making our own bacon for the past year but now that I'm Keto, I told my husband, we need to use either Monkfruit or Swerve on our next batch! Your recipe looks great! I probably would use as much bay leaf or peppercorn but as Jess says…You Do You! Love your channel!

    Would a vacuum seal bag work? Or have you considered a Umi bag used for dry aging? (My thought behind it is you use a vacuum sealer to get the air out- and w Umi bags it also has the ability to release moisture wo letting moisture in. This was a fascinating watch!! I love cooking and making foods. I haven’t bought any stock in years Bc I make and pressure can my own. I will 100% be making my own bacon.

    I took 2 3day weekend classes on how to make bacon starting with a live pig. Learned how to make many other wonderful things as well. Take a hog harvesting and processing class. Definitely worth it.

    Please don't use aluminum foil in direct contact with your meat. People spend a lot of money and go to great lengths to buy deodorants and antiperspirants that don't contain aluminum because it can go through your skin and cause neurological damage MS Alzheimer's and behavioral disorders along with early onset dementia. How do you think it works on your brain if you're putting it directly in your mouth voluntarily? I'll bet you buy aluminum-free baking powder. The world Health organization has put out warnings against using aluminum foil in direct contact with food because the free aluminum ions in a low-quality product like aluminum foil, which also contains a lot of other unhealthy things, will freely travel into your food, into your bloodstream, and to your brain. It's okay to use on a baking sheet to catch drips underneath food on a rack and it's okay to use it to wrap the outside of a package that is already in a plastic bag or freezer paper to prevent freezer burn. But don't ever use the stuff in direct contact with your food.
