    This is the third year i'm trying your recipe. Meanwhile i let my sourdough starter die multiple times.. So i am restarting the whole thing over AGAIN 😅 I also recieved a stand mixer as an early christmas gift for the soul purpose to make panettone for the holidays.. This is going to be the best one, i can sense it. The flavour is amazing, my technique can be improved. THANK YOU PAPA 💘

    Hi Josh,

    I'm hoping you can help me. I want to try making your panettone recipe at work since we have a proofer.

    I'm wondering, If I do your feeding schedule for the initial stiff levain, can I feed it for the first 2 feeds using the 4 hr feeding schedule and for my final 3rd feed, can I do the overnight method? That way I can easily mix my dough the next morning. What do you suggest? Thank you!

    I’m trying your panettone recipe and I’m a little confused. I made the first levain and now should I wait 2 days until I start the 4 hours feeding? Do I feed the levain during the 2 days?
