    This is how people that living in Philly make them at home, the ones in ALL the steak shops are always using a squeeze bottle full of WATER on the cooking meat because they steam theirs, so ZERO browning. Brown your beef if you want flavor!!!

    Nicole — thanks for authenticating. I'm from Philly area and the backlash out-of-area cooks get from making cheesesteaks at home from Philadelphians is nuts. It is really all about the roll, should be really soft, bendable, melt in mouth. I'm an American wit (and lots of ketchup) — also the board in the background "How you doin?" is so funny. (aside: If you come to Philly, don't fall for Pat's or Geno's — there are better — those places are tourists traps).
