I made this today and it was so delicious !!!!
This is how I make my chicken before the real cooking starts. Because I like the grill to be crazy hot. So, I do the butterfly chicken for 40 minutes. With a piece of apple wood. Guests arrive and there's the chicken. And then I do fast things, with a new set of coals I got white in the chimney: costillas, veg, etcetera. I like to do it this way, because the chicken is very passive. So, I can drink a beer, set up the table, prep some sides. And I am sure to have stuff on the table for the people who are really hungry!
