    I made vegan pumpkin pie for Thanksgiving:
    Pumpkin Pie

    filling:

    1 15 oz. can pumpkin

    1 c for 15 oz. can full fat coconut milk

    1/2 c packed brown sugar

    1/2 c sugar

    1 heaping t cinnamon

    1/4 heaping t ginger

    1/4 t clove

    1/2 t salt

    optional: a bit of nutmeg and allspice

    1 t vanilla

    1/4 c cornstarch

    crust:

    1 1/4 c AP flour, plus more for rolling

    1 t sugar

    pinch salt

    1/2 c vegan butter, very cold, cut into small cubes

    3 to 5 T iced water

    a cap-full of cider vinegar

    In a large bowl, combine well all the filling ingredients.

    In a food processor, combine the flour, sugar, and salt.

    Add butter and vinegar and process until butter in small lumps.

    Add water 1 T at a time until the dough comes together in a ball.

    Roll out the dough on floured surface with floured rolling pin to an even thickness.

    Place dough in pie pan and remove excess dough at edges.

    Add the filling to the pie pan.

    Bake at 350oF for 60 min.

    Could you add coconut and if so, how much would you suggest and any modifications? Many MANY years (pre-plant based) I had a sweet potato pie with coconut and ir was AWESOME. So, now seeing your recipe, I am reminded how delicious it was and am tempted to try. Thanks!

    I'm tempted to make this in a springform pan lined with parchment. I am confident that would work, but do you think I would need to adjust the time/temp? Maybe I'll give it a go and just keep a sharp eye on it
