Looks awesome! I’ve never thought of using a chuck roast like that, gonna have to try it out. I usually luck out at HEB and find some nice Chuck Eye steaks, but this would be a bit cheaper and have similar results. Do you ever marinate yours?

It's better to get it from local mexican butcher sliced thin, and rub an onion on your grill before grilling, she forgot the salsas, and tortillas.
That was what was up at my house tonight. Cleaned and stacked fire wood seasoned from last year. Then got a fire going on the fire pit grill.
Wow, and yum. I wish you were my neighbor too. You gave me a great idea. I love ribeye. I can only find the very thin cut ones once in awhile at Walmart. I'm going to my local market and buy the thick ones and will cut the thin as you did with the beef . Thanks for the great tip. oh before I take mine off the grill I add lime to the already seasoned beef. I lived in Guadalajara for 10 years and that's how they made it there served with grilled scallions/green onions. Delicious 😋

If you put meat in freezer for about an hour or so, it makes it easier to thin cut meat… or just ask the most market/butcher to do it for you… I love carne asada.. remember to slice against the grain, especially after cooked
