I like to use sweet potatoes as an egg replacement. I look for a recipe that has at least 2 eggs and I replace 1 of the eggs with 1/4 cup of sweet potatoes. It has always worked for me.

Bake them if I don't feel like cooking on the stove. Mama taught me to Candy them. By clean, peel them, slice them up. Put them in a pot with butter and sugar. And LORD I cant wait to eat the up. Also Sweet Potato Pie. I just love them.๐๐๐๐
