    You are correct you’re supposed to mix the sauce into the pasta before serving it however, I do enjoy how your wife likes it. I like the sauce just on top of the pasta.

    Since most people don’t know this. Those are actually not San Marzano tomatoes. The actual San Marzano farm is super super tiny and doesn’t export the product. It’s just a company capitalizing on the name.

    Just made this sauce for dinner and oh man it is so good. I usually use the store bought Ragu Garden Vegetable but this is hands down more flavorful. My cooking has improved 💯 perfect since following you. Everything I have made has been good. You have also saved me for Thanksgiving and Christmas. I feel more confident in the kitchen.

    Tomato paste is an option. I find that a little anchovy paste , Worcestershire, and other sources of glutamate are also fine, without the intense acidity.
    Wine at least offers great flavor in exchange. But, here you can use, not beef stock, but something richer. You can make it.
