    Okay, I've made a few of your recipes so far and tonight we made Fra Diavolo for super. My husband doesn't like any kind of grits so I was bit worried he wouldn't like it. But he was game to try, and he even made most of the polenta. And it turned out fantastic!!! All of it.

    Like the polenta. Tiger shrimp a go to. Cut in half. Many people don't know how to prep them. No butter or garlic? Screw that. I am a professional cook. I won't even do that, in jambalaya, or gumbo. You can have at that. Amazing for you. Not for me. I hate too spicy shrimp. I want to taste shrimp. Not hot spices.

I noticed you use and inferred thermometer to check many things like the pan before put the shrimp in. Perhaps you can do an episode on when to use it and what temperatures you are looking for.     Looks delicious. I love spicy food. However, grits and polenta while interchangeable are NOT the same. Grits is made from a different type of corn and has more starch and a more pronounced corn flavor than polenta.
