    I do a similar version, but only 500 for 5 min, then 375 for 55 min, but then after the 3 hour oven, one last warm-up 1 hr before you want to eat, 300 for 45 min, then rest for 15b min. What temp is your version at when you "pull" from the oven and what is the temp after resting and just before slicing up ?

    Been doing this method of cooking for years, perfection!!! However I find the roast needs no resting time. Why? Because of the time it sits in the oven on off, is pretty much like resting at the end of those 2 hrs.

    I've made this recipe a few times. This last time my temp hit 130 at about the 1.5 hour mark. I thought at the time I should have pulled it out of the oven. After the full 2 hours and the rest, it was too 'done' for me.

    Should I have pulled it earlier than the full 2 hour mark when I hit my temp?

    Didn't work. It was delicious but I followed the timing perfectly. 5 minutes per pound at 500 degrees. Then turn off oven and do not open door for 2 hrs. then let stand for 40 mins. It came out rare. I had to put it back in the oven. Was really disappointed. But it was delicious.
