Wait, I understand about Pot in Pot over an entree (chicken). But if I were ONLY cooking the rice in a pot inside the IP, wouldn't I still need water in the IP container to bring it to pressure? Are you saying you can cook PinP with only water in the rice container? I'm confused. Everyone else says to put water in the pot, too!
Question. I put rice and water in a pan without a lid on a sling and water in the IP as if there was chicken in the bottom. Rice came out uncooked in the water. I see videos using a lid on the inner pot and others off. What am I doing wrong?

I'm wondering trying pot in pot. Bottom pot will hold halved sweet potatoes sprinkled with cinnamon and some bourbon and pat of butter. Top will hold baby carrots sprinkled with cinnamon and pat of butter using steam lid. Each will be served in a bowl with the bourbon/butter mix poured over sweet potatoes.

Karen, I have a question; I made your recipe for enchilada chicken and rice tonight. It was good however I got the burn message when the pot was ready to start the slow release. Now, I have to tell you tat I used everything that you have in the recipe + I added a can of diced tomatoes, a can of chopped chili peppers. I didn’t think that would make that big of a difference. Could the burn notice have been because the rice went in first before the liquids and no stirring? I shut it off right away and it wasn’t burnt just brown on the bottom and everything was cooked and very good. Help, what did I do?
you are showing it without anything else in the pot; what happens if the pot with the rice sitting on top of the chicken is over the safe mark; I tried this and the pot with the rice was over the safe mark, I did not attempt it because it seemed unsafe

That is a nice idea and does save time when preparing a meal. I have to try making rice dishes using the method you spoke of and see how they turn out.
Thanks for the great tips on cooking pot in pot rice. Did you let it naturally release for a few minutes before doing a quick release and opening lid or did you quick release as soon as your 10 minutes were up?
