Is it possible to replace both chiles and tomatillos? I'm from Argentina, and it's a pain in the ass to find good mexican hot peppers. It's easier to find peruvian ones (ají amarillo or rocoto) and jalapeño.

I am thinking about making this with pork or chicken (just not anything too spicy) in a 6qt instant pot. I live alone so if I cut the ingredients in half (I'd only want leftovers for one day not 3), would that still work, e.g. 1.5-2lbs of meat and half the amount of peppers? I am wondering if I should cut down the cook time in that case. I know if it used chicken I would have to do much less than 30 minutes though, like 15.

I've since used it in dishes I would have never considered before, like making a fresh tomato sauce that was a bit too bright more savory in an instant.

Oh how I wish I were a rich homeowner with a pressure cooker, mortar and pestle, and immersion blender sitting in the cupboard. Then I could stop being enticed by "easy" recipes that turn out to be impossible for me to make.
I never thought of not adding liquid to the pressure cooker, I'll try it for sure. We don't have tomatillos here though. What could I substitute?
