Thank you for incorporating being a cook chef and a science test all in one video this makes me so happy being a scientist and a chef in one.
Its worth mentioning about yeast; its literally everywhere and theres even yeast naturally present in the flour, just not generally enuf to make bread rise significantly unless you help the yeast grow to begin with; which is the first step to making sourdough.
I really liked the science vulgarization bit, which was pretty much spot-on. There is a real science to making bread, and you really did it justice !
I really like how you don't only show the recipe but also give all of that neat background information. It's a really enjoyable format, keep it up.

Fun Fact:
In Greece, pita is used for souvlaki(extremely popular greek fast food)! It's that bready thing wrappedaround the meat.
Also, pita means "pie" in Greek =D

Starches are a staple food because they are cheap. There are no essential carbohydrates a human body needs to survive. Carbs are not "important to nutrition", they are important for poor people to stay alive in absence of better food. That olive oil in the end was that good food, all the carbs making your pancreas pump loads of insulin to deal with carbs is what taxes your system. Otherwise, great video. Love the format!
