    That's not the way we make American eggs. My Mom has always made the eggs medium to lightly firm with no moisture. The diners I've been to make them the same. My aunt makes them the same. When I was a kid I'd go over other peoples house (invited by a friend) and some times I would get them extra fluffy but never, never were they ever "Moist".

    When I have really fresh eggs, my favorite is country scramble. Somehow they just taste more eggy. Get the pan hot, crack the eggs into it. let the whites start to congeal then break the yolks and start moving it all around the pan and pull them out before they're fully cooked. Salt and pepper, YUM! truffle salt is even better.
