    I love your recipe!
Today's Easter Sunday and I've been tasked with making and bringing my version of Red Beans and Rice.
I know that there are many different recipes' mine is just one more in the -sea of goodness1! lol
I've always used a good ham-hock (hard to find as I called and drove to every grocery store and butcher shop, but I was lucky and found one in the next town over!
Hey, it ain't worth doing if you can't do it right!
Of course, all the same ingredients and spices that shown here but I've added chicken stock instead of water bc our city water doesn't taste like chicken stock! lol
Back in the 1970s, I was stationed in Gulfport Mississippi so I fell in love with the culture and cuisine.
Mom always told me to ALWAYS use the ratio of 2:1 )water to rice) but it's ok to slightly deviate if you're making a "wet" soup/stew like the RB&R.
I don't want to upset mom bc she'll throw wooden spoons at me! lol
Anyway, Happy Easter and happy eating!

You have a meal there just with the bean dish alone due to the meat you included in the pot. You are correct about cornbread to go with it and then have some sweet tea to drink with the dish and one would be full and content. I am not one who love kidney beans or any dried beans since my mother burned me out on them when growing up. Once I finished high school I wore never to eat any more beans except green lima beans and string beans which I still love to eat.

Hey Charlie. I just want to say thank you. Watching your videos has been an inspiration for me. I normally shy away from cooking since I am only really comfortable with basic meals. I watch, listen, and follow along. Sometimes I mess up, but I try again if I'm really in the mood. When I get it right though, I say thank you and thank Charlie. Have a great day.
