    Carolyn girrrrrrrrrrl this rice is amazing, but I had to work with what I had already! I used a 14.5 oz can of fire roasted diced tomatoes and poured the whole can in the blender with the
    roasted onion, garlic, and part of a red bell pepper-those were the only changes made! The rice was so good, and btw I am still making your enchilada sauce every chance I get-delicious! Thanks so much for sharing!!!!

    Great job

    I'd mix some butter and the spices when vegetables are being caramelized. Then add chicken stock to pan to deglaze, before putting into blender.

    I like your idea of roasting, or caramelizing, the onion, tomato and garlic, and then into the Vitamix.  I will definitely be doing it this way from now on.  Saves time on all the fine dicing I've been doing with the veggies before adding.  Not to mention adding a little more flavor.    Now why didn't I think of this myself?  LOL
