Menudo is so good especially in the winter

I saw another video that they said the cook it 4-5 hours low simmer. But I’ve never cooked it that long. 1 1/2 to 2 hours that’s it.
I’ve got a much sharper knife find it Walmart the green handle pioneer woman Stainless steel nakiri knife. Very sharp haven’t needed to sharpen it and love that’s it’s a rigid knife won’t bend sideways messing up your cutting. Highly recommend this knife. Had it for about a year now
