Found this chicken stock recipe after doing a hopeless western one. Thank you Roland! Forgot about the garlic and white peppercorns. 🤦🏻‍♀️. Used the following: 1.5 kg chicken feet

1 big fat leek white part

    2 stalks spring onions

    1 bunch of English parsley

    4 Bay leaves

    1 yellow onion

    2 litres water.
Used the leek etc. coz I used it in my first attempt at chicken stock which used chicken wings & minced chicken – total waste of good free range hormone-free chicken – hardly any taste. Glad I found Roland’s chicken feet formula.

Do you have any suggestions for the leftover chicken feet? Sometimes I add the "meat" to fried rice or one pot noodles etc, but was wondering if there's other ways to use them 'cos 1kg is quite a lot of chicken feet and I find it pretty wasteful to throw, thanks!

Hi Spice 'N Pans, this is the recipe I will use for my stock. In case of a regular stove and 1.75 liter water do I need to put the lid on or off during simmering?
