    The EPA has warned that people shouldn't use hot tap water for cooking because hot water is more reactive to things, and as its running through the pipes it's more likely to leech contaminants like lead into it. Heat up cold tap water, so.. in the case of the instapot, maybe add a little extra water and use the saute mode or something to preheat it? I'm not sure on that one, just an idea.

    yay! mine came out perfect, used 1cup of hot tap water on my ip-lux60 v3 (6lt), manual 0 minutes ! not mushy but crispy THANKS!!!

    YAY!!! Last time I did a bag of broccoli at 0 minutes (the only time I’ve tried steaming broccoli in my UP) it was mushy. I wondered if starting with hot water would help shorten the time it was cooking- yours look like it came out the perfect balance of cooked yet crispy. Thanks
