Shredded Pork Recipe for Tamale Filling

1 large boneless pork shoulder
salt
pepper
cumin
chili powder
oregano
garlic powder
olive oil
2T chipotle in adobo
2 yellow onions
2 cups beef or chicken broth

Cut pork into large chunks. Season with seasonings generously. Set Instant Pot to saute and add olive oil. Brown chunks of pork on all sides and remove to dish. Use broth to deglaze bottom of pot. Stir in chipotles. Add pork and onions back to pot. Set to sealing and cook for 90 minutes on high pressure. Let the IP do a 30 minute natural pressure release. Cool pork and shred, reserving broth for masa mixture. Use for filling in tamale recipe.

Can also be cooked in a crockpot for 10 hrs on low.

    Don't stick your fingers in the food that is so nasty. Everybody took turns. You can't use too much chile you only need a few. You need alot of practice in making them.They do not look like tamales.

    I noticed that you did not STRAIN the red chili before you added to the pork. Chili has a thin skin on it like a popcorn kernal does. When chili is green, we roast them and then peel the skin off. with Red chili, because they are green and then turn red and dry, we have to strain them. You should use a fine strainer to eliminate that fine skin and your sauce will be smoothe, less bitter, and taste better. Your masa looked a bit thick and maybe could have used more broth. Anyway I commend you on a GREAT effort and Loved the video!

    Grew up eating tamales, but only made them once. One of my favorite local plays here in San Antonio is Las Nuevas Tamaleras about a group of women who get together to try and make them on their own the first time. Since I started using my IP I got brave enough to try. Your recipe makes it look much easier. I'm going in! 😉 Hoping to have some yummy tamales and albondigas tonight. Happy New Year!

    Natural release on the tamales? I'm thinking you probably didn't have to oven roast the peppers. They're already dried, which enhances the flavor. Maybe that's why they were so spicy? Your tamales look great.

    I used to live in Tucson and LOVED when ladies would sell tamales outside of the Hispanic grocery store. Such a treat! Great video… makes me feel a little braver to try at home🌽🌶🍖

    Your tamale masa was the right texture for tortillas but not tamales, you should be able to spread it with a knife and come they out soft after steaming. Try adding more lard to the mix

    Both times I used my instapot to steam my tamales it turned the Monterey jack cheese orange? have you had that problem? When I make my cheese and jalapeno tamales in a tamale pot it doesn't happen. I've googled it and absolutely no information at all.

    You made your masa wrong. Your supposed to spread the masa out on the husk. When you make your masa you have to mix with your hands four at least 45 min.. Oh well you tried. That's not the way you roll. I hate to disappoint you, but those are not authentic.

    I made mine all in the instant pot. Did the pork shoulder with bone 1 whole onion and 2 gloves garlic and 4 cups water for 2 hours. Pull pork out of instant pot and debone place bones back in instant a long with any rind and jelled fat. Shred meat refrigerate. Add 6 to 8 cups of water to bone and broth pressure cook high 2 more hours. Strain bone broth, pour desired amount of stock back into instant pot for chili sauce and pressure cook ingredients 20 minutes on high. I just mix chili mixture with emmerson blender and whaa la I did the first few steps a day or 2 ahead of time without cleaning up in between. I make fresh corn masa from mexican hominy and rendered fats and stock.

    I love tamales but hate making them. They're a pain. Not sure if you know this, but you dont need to toast the chilis. Just soak then in hot water. We also add chicken bullion instead of salt to it. Just a suggestion.

    You’re an awesome inspiration for young and old alike! I’m an experienced cook but, due to battling health issues, I’ve had to take several steps back and “start over” in my approach to food prep. I find myself turning to you again and again. I’m thankful for you! Congratulations on your subs and best to you in your endeavors. Tamales are one of my favorites (anything that comes in it’s own neat little package is incredibly appealing to me) and you’ve make me want to grab my sister and daughter and get busy making a huge batch 💖😊

    Those look so delicious! I have made homemade chile sauce for enchiladas but tamales always seemed so daunting. I may have to talk my mother into making these with me! I think she used to back in the day when we lived on the border! Love your meal preps!

    My family made the 2 hour trip to spend the weekend with my sister and her family. She and I made your quiche together for the first time! It was amazing. We ended up making breakfast, lunch and dinner with enough leftovers for tomorrow for the 9 of us.
