Are you vegetarian? I don't see any Ham or Pork added to the pot. Just wondering. That said, I like it. It looks moist and beautiful color. Also, I would add some grated green plantain, to give it an apastelado flavor.
I used the liquid from the pigeon peas and accounted that for a cup of liquid. I selected the rice button and 12 min came on the screen for a few seconds then "auto" came on for a long while before it started a countdown of 24 minutes, which cant be right. The strangest thing was I didn't have to release the pressure when it was done. Also at least 3-4 servings was stuck to the bottom of the pot and gone to waste! Next time I will use a nonstick liner pot and select the manual button instead.
This rice is “amogollao” you had to use less water. You had to count the gandulea water and the sauce. For the sauce you don’t need that much 1/4 cup of the sauce would have been fine. Also when rice is steamed it tends to take longer to dry. Your Sofrito was on point.
Pimientos morrones and red peppers are the same the only difetence is that one is fresh and the other one its like pickled…ajices dulces are the small ones that kinda looks like habaneros.
The sofrito is not the sofrito, the sofrito is the recipe.

The only mistake she made was not draining out the water from the gandules. If you're going to add 2 cups of rice after add 2 cups of water.
She added the water from the gandules into the pot.
So altogether she put three cups of water instead of two.

You needed to cook it for about 5 more mins. Don't forget the GANDULES all ready have water.
no puerto rican is going to say this rice looks good whatsoever 💯. if this is the results, i won't buy it.

That can of tomato sauce makes it mushy
How do you make this not looking so mushy please???

How long do you leave in saute mode?
Looks good. I'd add Spanish olives and some diced ham.

It looked mushy. I would use 1 1/2 cups of water, you didn't account for the water that you poured from the peas.
