    I just had this for dinner and let me say thank you. Gumbo has been one of my favorite dishes but I have not made it in years because, for me, the dark roux is the heart of the dish and I no longer eat flour. It was delicious and every bit as good as I remember. The family loved it too.

    Made this today. All I can say is thank you thank you thank you!!! Me and husband had 2 dinner guests over and everybody thought it was fantastic. I served it with Cauliflower rice. Yum!

    Me again. My husband and I fixed your gumbo tonight and it was delicious. I will go so far as to say it was as good as, if not better, than a gumbo with a flour roux. The seasoning was perfect. I can't wait to try your etoufee. You wouldn't happen to have the macros for your dishes, would you?

    I have tried various substitutes for flour in the roux, as have you, but never even thought of Carbquick. I have it in my pantry ๐Ÿ™‚ I can't wait to try this. I love Cajun food and was afraid I would have to cheat on my diet in order to eat it. Thank you so much for all your recipes.
