Kelp noodles are great. It is like glass noodles. No fish smell. The trick is adding the noodle in water with lemon water and baking soda. Leave in about 20 minutes…it goes from crunchy to soften. I left one for 30 minutes and it got mushy like when you overcook pasta. The flavor will be in the sauce you make. Here is an example or google keto help noodle to soften.
