LOL. A Instapot Newby. I thought my pot was broken because it didn't take 25 minutes to cook the kidney beans. It took a lot longer. LOL. Thanks for mentioning cook time reality. Got to buy your book. Didn't have liquid smoke so I used smoked hot sause…thankfully I didn't over do it. A few drops more and it would have been 5 alarm too spicy.

Now when cooking beans the magical fruit if you want beans but no gas you need to soak them in a pot of water after washing them and let them alone for a day or two depending upon the room temp. Foam will develop on the water and this is the enzymes coming off the bean hulls, this is what gives you the gas! A little fermentation happens in the water and the enzymes will be lifted off the hulls in a day or two and then simply rinse them several times before putting them in your pressure cooker with water and a squirt of olive oil, onions, garlic, peppers, etc. The result? No fart beans!

The best way to get the most flavor out of your garlic cloves is to lay them on a cutting board and slap them flat with the side of a meat cleaver! then toss them into the pot, this releases all the flavor of the garlic into your water.

I'm too impatient to wait overnight for bean gravy so when I remove the Instant pot lid, I just mash a few of the beans, remove a little excess liquid and turn the pot on high and stir until it boils. Voila! Gravy in less than 3 minutes. ๐Ÿ™‚
