    Hi Jill – love your videos, so refreshingly simple. In this video you did a quick soak on the cannellini beans and I was just curious if you did it because of the lectins. I'm a vegan and been to a lot of recipe sites that say to soak beans if you feel like it but not necessary.     At the beginning of the video, you show a bag of beans that has 1 lb 8 oz marked on it, but you say to use only 1 lb in the video. I used a 1 lb package of beans and ended up with a mushy pot of beans. (That's ok because we used a food processor to make a hummus-like dish which tasted fine.) So I'm supposed to use the full 1 lb 8 oz package to have a final product like you show in the video, where you can blow on them so the edges curl up, right?

    I just went to my local H-E-B to try a cannellini bean and kale soup recipe from another channel. Getting to the grocery store, I found that the only dried ones were the Bob's brand and they were $9.99 for a small bag! Well, so much for that. I bought some great northerns for 82 cents for the same sized package. Do you think it'll turn out all right? It has sauteed carrot slices, garlic, onion and celery, etc. BTW–Happy Holidays!

    For faster beans, throw in 4 or 5 cups of water and 1 cup dry cannelini beans into instant Pot. Push Manual for 4 minutes. After 4 minutes is over leave in pot until "keep warm" timer has reached 10 minutes. (This is the instant soak tip on page 12 of Instant Pot Recipes I received with my Instant Pot. (Next, no need to open pot unless you want to add other stuff. No need to add more water.) Push manual again for 8 minutes, and when 8 minutes is over leave in pot for 10 additional minutes on off or keep warm mode. Open and eat.

    At 0.37 – You can get rid of that "starch". I got rid of mine by using the good old Indian way of cleaning: Squirt some drops of lime or lemon juice after your use and then clean it with a dish detergent – I guarantee you'll not see those dull greasy looking spots in the Instant Pot. You'll be surprised how effortless this is in getting rid of those rather nasty looking stains.
    BTW before I used this method, I even tried to clean the pot with a wired mesh and ended up scratching the surface with the stains still intact.

My question: I noticed that you cook all beans the same length of time (other IPot sites/books recommend different times for different beans), but in the cannellini bean recipe you use 10NR vs NR (as you use for black beans and kidney beans). Is this how you control the "doneness" of the beans? Thanks!

    I received my IPot last Friday, but didn't use it until this past Monday…made the best BBQ Chicken, ever……..in about 30 minutes, total! I'm hooked for good…..will do some dried beans tomorrow…depending on what's in the pantry. Woot!!
