    I am so glad you posted today!❤️ My birthday is today and it is rough because my mom passed away last year and I am missing her very much 😭 she loved food and cooking. And she instilled in me to be brave with food and try something new 💖

    This was great. I’ve had and created some very good “struggle meals”. My personal favorite is my birria recipe. I use tougher cuts of beef when they’re on sale and braise the ever loving life out of them. Add a little butter and gelatin to supplement the lack of fat and viscosity and all of the seasoning you want, beef broth, and mirepoix cut in large pieces so you can fish them out later. Boom. Restaurant-quality “Birria” at home for under $20.

    Breadfruit (Pana) was a main food staple in Puerto Rico until the occupation of the U.S. when they promoted potatoes. Pana’s are still consumed but you don’t necessarily see them in supermarkets locally as you do potatoes. Much of PR’s food is imported. Jones Law and all that.

    Struggle meal-

    Potato soup and pfannkuchens.
    I’m amazed that a collection of 5 simple ingredients creates such a masterful dinner. My grandfather who emigrated to the US from Germany taught my mom this recipe, she taught me, and I’ve taught my wife.
    The Potato soup is a chicken bone broth seasoned with salt, pepper, and new addition from my family miso. In the bone broth boil pealed and quartered potatoes until softened. Mash softened potatoes until a thick porridge forms.
    The pfannkuchens (fon-coo-ns) are a savory egg crepe.
    They are made with a 1-1-1/2 ratio
    1 part egg, 1 part milk, and 1/2 part flour. Melt butter and lace batter liberally with butter, season with salt, and the secret ingredient a scoop of the soup. This leaves delicious little potato pockets in the final crepe. Melt butter in a medium/high pan and fry pfannkuchens into thin crepes.
    5 simple ingredients
    Chicken broth
    Potatoes
    Flour
    Egg
    Milk
    And the result is like a hug in a bowl. When I was at my sickest going through chemo and a bone marrow transplant, my mom bright be this, and this brought me joy…
    Sometimes things are greater than the sum of their parts and this is true for this…

    A 'struggle meal' I really like is mashed potatoes (on late nights i use instant) with corn topped with steamed broccoli and cauliflower, with shredded cheese in the middle, finished with gravy all over it. It doesn't take too long to make, especially with short cuts like frozen veg, but is still so warm and comforting and is a good way to eat vegetables. Strong recommend for the cooling days.

    Hello! To answer your question about ‘chicken fried <xx>’ I’ve lived in Canada and Australia and have never seen it used unless you’re in an American style restaurant ❤ (so not a common phrase outside USA)

    Hey Beryl! I’m a native Spanish speaker and I would love to have a conversation club with you and other people learning Spanish/Spanish speakers! I think it’d be a great idea to connect this community through language too since it’s hard to find people to talk to when you’re learning another language! (I am learning French and I’d love a Native French speaking friend 🥺).

    One of my favorite comfort dish beside poutine (I didn't forget you Beryl! The best brand of poutine sauce isn't sold here anymore and I didn't find anything good yet to replace it 😥 I wanna give you the best of the best!) is:

    -Minute rice (very important, it's not the same with "normal" rice")
    -Tomato sauce
    -Mozzarella (not the expensive kind lol)
    -A bit of sugar & salt
    -Lots of black pepper!

    I put 1 cup of rice with 1 cup of water and put it 5 minutes in the microwave. Once it's done, I add enough tomato sauce so it sticks to each grain of rice and I put little pieces of my cheese in it. I salt it a little bit, use a bit of sugar to reduce the acidity and I put a lot of pepper in it so it can be a bit "spicy". I put it back 1 minute in the microwave so the cheese melt and VOILA! 😍

    Ok for those who eat spam… I need help! 😅 I'm the kind of person who is DISGUSTED by biting in a hard and crunchy part in food like sausages, chicken, ground meat, etc… My question is: would I be ok with spam? If I buy it and find out it's not 100% soft I might resist the urge to puke so for the moment I never tried anything with it lol

    BERYL! Since I learned a simple "trick" for fried rice, I started doing it regularly… I know you'll love it 🙂

    Put an uncooked egg in your cold rice (be sure grains are well separated) and mix it. The egg will coat each grain of rice and frying it this way will give THE famous fried rice taste that we all search for! 🙂

    My Chinese American family ate spam a lot when we were little in fried rice or stir fried rice vermicelli made by my mom. Now we are grown up and more health conscious, we don’t eat it anymore. Mostly because it is processed meat and extremely high sodium.
