I wish you lived close. I think we’d get along well. I homeschool, have 7 kids, chickens, goats, rabbits…I’ve been trying to get better each year in the garden. Your preserving is inspirational! I aspire to someday get better in the garden. You’re doing a great job.

You should look into growing Lion's mane mushroom. One of the easiest kinds to grow, it tastes like seafood, and it contains the nerve growth factor gene which aids in nerve growth for your brain. If you are interested I would check out some studies about it.

potato fries . Chop up the potatoes. It's round, so it's very difficult to cut into slices. In this case, it is convenient to cut one side of the round part flat, then set it up with the flat side facing down, and then cut it. Everyone knows that the red arrow mark is the same part, right?

Prepare the carrots and onions by slicing them. It's hard to mince it, but if you cut it with a slicing knife, it will break quickly and it's easy to break when stir-frying. It is better to cut it with a knife if possible.

The golden recipe for stir-fried potatoes is this. Add a spoonful of bay salt (coarse salt) to the boiling water and add the shredded ones. The point is to bring it in advance.

Just 2 minutes!!!! It should be cooked slightly unripe so that it does not break when frying in oil.

After boiling, strain through a sieve to drain the water. Potatoes need to remove starch so that they don't burn when roasted, so you need to soak them in water for about 10 minutes to remove starch, or boil them like this to remove starch.

Put olive oil in a heated court pan, add carrots and stir-fry, then add onion~ After it is cooked to some extent, add blanched potatoes. Since it is blanched once, it cooks quickly, so you should cook all other vegetables before adding them so that they do not break and stir-fry quickly. Add half a teaspoon of salt to taste and add sesame seeds to finish.

If you put it in a pretty bowl, the delicious potato stir-fry is complete.

I wanted to thank you for all that you do. The information you put out is very useful and informative…I just moved to the same area of northwest Arkansas and was wondering if you had a video outlining when you start/plant everything out? Or a cheat sheet available?
