    I love your receipes and your new book sounds great! Having said that, I need to adress the elephant in the room. Food waste. In terms of Climate crisis food waste is insignificant. Eating vegan food has a much bigger impact on your carbon footprint and spending your money on vegan food has a huge economical effect (supply and demand). So keep up the good work in inspiring people to cook and eat delicious vegan food.

    I use Nigari for my tofu..and I'm familiar with tofu making, do I just season the milk and carry on as normal? Is the lemon juice about flavor (a must) or just the coagulation? The rest looks brilliant! Can't wait to try this!!
