    the only thing i would do different is dredge the beef in ap flour that has your spices in it, then after the meat's seared on all sides, the liquid you use to deglaze the pan will thicken and make an awesome gravy to use with the mashed potatoes. feel free to try it and see how it turns out, might give you an extra trick to use in another recipe later down the road. alternatively, you could strain the juices from the pan after the beef and veggies are done cooking and make an awesome gravy with that instead.
