you may want to add a note in the video to start with all ingredients at room temperature. I made the mistake of not doing that. I was soo mad for wasting pastured eggs!
Just came across your channel. Mayo sounds great I will try with Olive Oil.. I really don't want a mayo though that is like miracle whip.. nasty.. what about not adding so much sugar? or mustard?
Hi, have been making my own immersion blender mayo for months now, but didn't know the hack for keeping it longer. Thanks so much for that. When you made the 2nd recipe and sieved it there was more egg left in the sieve….maybe that was the reason the second didn't thicken as much.

What if you added a touch of xantham gum to the avocado oil recipe?
I was anxious to try the immersion blender method so I bought one but I didn't have extra light olive oil so I used what I had. It never got thick by blending it no matter what I did. And it was very yellow too (probably the mustard?). Anyway it's in the fridge now. We'll see if it can set up. Fingers crossed. 🤞

Great video! I am looking forward to trying this for the first time (with an Emerson blender that is probably as old as your food processor). I doubt that I will include any sweetener because, where I grew up, there were mayonnaise lovers and there were Miracle Whip lovers, and never the twain shall meet!

Just made the olive oil mayo with the immersion blender and am waiting for it to thicken up…wish me luck! Up until around 2 years ago I hated mayo and then became a mayo convert and haven’t been able to switch from Duke’s. Fingers crossed that this one does the trick; I’ve tried several avocado recipes and just about all the brands (Primal Kitchen, Chosen Foods, Sir Kensington) and just cant make the jump; the taste isn’t right. I tasted this one after blending and it seemed to have the right tang…I’ll report back!
Finally tried making it I used a bullet blender and mixed avocado and olive oil 50/50 thanks for the inspiration!

I despise Miracle Whip…always have. If I eliminate the sweetener and/or mustard will it taste more like "real" mayonaise…I hope?
Question: Is the microwave essential for pasteurizing the eggs or can a double-boiler be used stirring constantly?

The ingredients in Duke's mayo are soybean oil, eggs, water, distilled & cider vinegar, salt, paprika & "natural flavors". I may give that a shot but with the olive oil combo and leaving out whatever "natural flavors" happens to be, lol.
