Yum, Frito pie! I didn't know of it till I lived in New Mexico,when I worked at a casino.I also add lettuce,tomatoes,onions & tomato salsa & lots of juice,too!

I do make your enchiladas on the regular as they heat up beautifully for leftovers. Will be trying your corn bread casseroles–should also be great heated up.
