I worked at Sur La Table and learned a lot of odd facts. Learned that if you rice the potatoes they don't get glutony/gluey. Straight mashed potatoes get gluey if mashed direct.
I watched this awhile back, I made it tonight, January 31rt. 2020, boy It's a lot of work, hope it gets easier, but 3 sautéing episodes LOL! I took pics.

I made a very different mushroom gravy for Thanksgiving and GOD I am so sorry I didn't find this until it was too late. I will be making and taking some stuff for Christmas dinner at my cousin's and I WILL be taking this entire thing as my meal along with a seven layer salad. This is just…wow.
Made the gravy with Italian seasoning. Didn’t add the sautéed mushrooms and onions at the end. Just blended it smooth…on mashed potatoes. Couldn’t believe there was no salt. Sooooo good!!

came late to your videos and just a big thanks a year later — Canadian txgiving is earlier but all is relevant. You don't do recipes; well nor do I but the reality is that when something works, I write it down. I've verbatim followed some of the stuff that you have done and people come over — vegan cheese sauce in particular — and no-one ever says there is no cheese in this cheese sauce, it's great. As I understand it you were really influenced by The Starch Solution, correct me if I'm wrong; it was immensely helpful but at the beginning I did need a template and continue to read/watch Michael Greger because I like vr much his detachment; yes he knows an unprocessed plant based way of eating will save your life but also with his elves doing constant research he is happy to reverse a recommendation if new info comes in. For me sometimes the devil is in the details; you cannot over cook carrots and roasting a sweet potato is brilliant but don't eat the skin; by contrast broccoli and perhaps by extension brussel sprouts lose a lot of nutrients vr quickly so dust with mustard powder, seriously not voodoo just research. Anyway, cheers and tx for brilliant videos!

Save time. The potatoes are more nutritious with their skin on. The potatoes can be cooked with the veggies in a huge stock pot. Where's the beans? It looks like a feast!
love the vido, what about a vegetarian turkey substitute. I need that. I am planning on a vegetarian lasagna for my vegetarians. I generally dump the vegetarian/vegan food after dinner because most people won't eat it or I donate it to the shelter but I think they dump it in the end too. vegan is a great idea, but it's totally dumpable
