    Since that is a fully cooked Ham 140 degrees is the Temp you want. At 190 + the meat starts getting to the pull apart shredded stage. Now if you like it that way then no harm no foul! Some of my best mistakes in cooking has turned out to be my Go To Dishes!! I sure hope you show that Ham Bean Soup Video.

    Question: if the probe isn't accurate, why use it? I have a Hamilton Beach slow cooker with a settable probe and it cooks such as this exactly to the right temp. 155F is way different than 195F; no wonder parts were overcooked. Are you sure it isn't a defective appliance? You shouldn't be having to guess where the food'll end up…
