    If my late mother were alive, she'd want to adopt you……..your way of cooking this dish is so much like hers excepting the chilli flakes and the baking of the eggplant instead of frying it. But I have to agree, baking the eggplant or other ingredient is better. I have tried it with another one of your recipes and it works. Keep up the good work!!     Houston? For some reason, I thought you lived on the East Coast… I truly wish lamb was less expensive. It's cost-prohibitive for too many people, My fam eats it at least twice a month. I made gyros, (all lamb, no beef,) last week. But your stew is next on my hit list. The farmers market is still pushing gorgeous eggplants, and I support the local guys whenever possible: When lamb is in season, i buy it often. But in summer, fall or winter, I gotta buy it frozen from Colorado, New Zealand or Australia… 'cuz I just gotta.
