We directly boil chicken and use its broth for the soup as well, l am Turkish, we mostly have the same cuisine basically, that lemon mixture is called meyane, it is either egg yolk, lemon and flour, or just egg yolk and lemon, with flour it makes the soup thicker.

This soup looks delicious 😋 our damp Irish winter is fast approaching so this will be on my menu! How many people will this serve. I'm guessing that it is low in calories. I have never seen this thickening technique with the eggs, lemon and rice. Thank you for letting us in on the secret x

Way to thick no need to use blender soup best way do not roast you need to make a broth eith fresh chicken no need to add olive oil no one does to much fat you need a carrot potato a very small piece of an other root veg salt and pepper then take the chicken out of the broth and the vegies seperate the meat from bones add the egg and lemon mix on to the broth then add the trimmings the soup needs to be velvety and not thick !

I must say though that the best way of cooking this soup is to boil for several hours the whole chicken – especially the bone parts – so you can get a yummy and nutritious broth, and then put the remaining ingredients 😉 Greetings from Greece!

I will have to make this to share with my eldest son! We both love Greek food. I do have a question though, when I’m doing more strict eating (no grains at all) do you think cauliflower rice would work instead? The only part of using it I’m unsure about is as a thickening agent as you do with the rice. Would cauliflower rice thicken enough?
