Interesting, I'd never thought of using beef heart. I've got to give this a try.
I just done my first heart also. I went really clean in the meat. Just stuck in pressure cooker then to slow cooker mode. I also pan seared a few pieces. It almost tasted like beef in Chinese food. It was easy to clean then other pieces the dogs are getting. Theirs has been cleaned also. Great video.

I don't think it's grass fed because of all the fat around it ,looks like it was fed corn,
The fat and silver skin should be removed. It's not the right kind of fat for rendering. Substitute other beef fat if needed for a recipe. 🙂

I add garlic, onion, beef broth, brown gravy mix, slow cook for 8hrs. 2 hrs before it's done cut a lot of new Pat toes into 1/2 cook until pat toes are soft

I have two grass fed beef hearts so I will cook one like this. I will also try it with the sweet potato too since sweet potatoes are the only type I eat. Thanks for sharing.
1- Avoid the heart fat at all costs, (even pork belly fat is a better substitute if you like eating fat)
2- I'm certain even 8 hours of slow cooking haven't made the chunks of heart meats tender, but that's fine, that's how it'll be, heart meat is just that way (for actually soft heart meat you should try heart tartare or pressure cook it)
