Hey Albert! What do you recommend to do with this dish if I'm vegan? Should I just keep the thing as it is without adding eggs or should I add a substitute indgridient?
Keep up the good work my man!

I made this tonight for my dinner, it was SO good! I have been making something similar for a while, but the smoked paprika and the grated tomatoes lifted it to a whole new level! 😋😋😄

    Hola Albert
Your spains answer to Ed Shearn…
You haven't done a bad recipe yet.
I've tried more than half now and my wife's blaming you for the weight gain…lol
That said she's addicted to seafood.
Just as little helper though, I only have a gas oven and you never state gas mark.
If you could I would be grateful as it will save me googling it…lol

Instead of grating tomatoes 🍅, I use my small food processor to make an instant purée. Thanks for hint of three minutes to poach the egg. Turned out perfect! I topped my dish with avocado 🥑 cubes. Delicious!

Sounds delicious. And to ensure that it drives the night time chills away, I am going to add one each chopped ghost pepper and habanero, and grate a little bit of Manchego cheese over the top.

This looks like a nice change from my regular breakfast. I don't care for bell peppers and will probably use some mild green chiles instead.
I made your poor man's bean stew last night and had the leftovers tonight. It was delicious, though it took forever (3 hours) for the beans to cook and they still were not quite as soft as I like.
