    In order to get good virgin olive oil, a person needs to go to the source on the day the oil is extracted. The essential oils in olive oil dissipate very rapidly. Olives are left to rot in the heat and sun, not good. Italy, Spain, have the highest quality. The oil sold in most stores is adulterated. Great Value has a good fruity flavors extra virgin oil that stacks up to the best. I find sampling olive oil side by side gives me a good idea of the oil I’m looking for. Store out of sunlight, in dark glass container. Discard after 6 months rule of thumb or taste before using. Oil rated as olive oil, or pure olive oil has high acidity good for sautéing carrots, or cauliflower to maintain the bright colors. Extra virgin ( no acidity) is used when sautéing broccoli or bright green vegetables for bright green colors. Acid turns green vegetables drab military green color.
