Okay so the guy at the market with the mushrooms said never use water on your mushrooms. Is that always? Because if there's dirt on my mushrooms I need to wash them and dry them of course.
He uses a lot of asian spices like anise, ginger, lemongrass…
I sure wish he would make the documented recipe available. He never gives quantities of ingredients not that helpful.

They are so tender and flavorful! The house already smells amazing, and they still have another hour to go. Everyone who has tried them has loved them.
