    I think a mild coconut flavor from the unprocessed coconut oil would be perfectly desirable in this recipe. Refined coconut oil is too processed for my taste. Could you substitute almond flour for coconut flour in this recipe? I also have a paleo baking flour that has blanched almond, cassava and coconut flour,. I just don’t know the ratios or liquid amounts for these types of flours. I know coconut flour absorbs more moisture than almond flour, but that’s all I know about using gluten free flours. Plus I don’t have almond flour yet. Love your recipes👍

    Yummy! Definitely going to save this recipe! I attempted baking cookies once with coconut flour, but they didn’t turn out as good. Almond flour sounds like a better alternative 🙃
