    Glass noodles are the OG “instant” noodles because you don’t even need to cook them in another pot before using them in any stir fry dish. Itt’s truly one-pot friendly!

    Ingredients (2 servings)
    100g glass noodles

    1 tbsp soy sauce
    1 tbsp oyster sauce
    1 tsp sugar
    2 tbsp water
    ¼ tsp white pepper powder

    1 tsp oil
    4 eggs (beaten)
    1.5 tbsp oil
    2 cloves garlic (minced)
    2 sprigs spring onion white part (cut half lengthwise)
    10g dried shrimp (soaked, rinsed, chopped)
    4 pc shiitake mushrooms (~65g)
    40g carrot (cut into thin strips)
    150g cabbages (cut into thin strips)
    2 springs spring onions green part (cut into 5 cm long)

    Steps:
    1. Soak uncooked glass noodles in warm water for around 10 minutes, until noodles are soft. Soak longer if the glass noodle is thick.
    2. Combine the seasoning in a bowl, mix well until sugar is dissolved.
    3. Heat up oil in a pan over medium low heat. Add beaten eggs to the pan. Once the egg is set, break the cooked eggs into smaller pieces. Remove from pan and set it aside.
    4. Heat up oil in the same pan over medium high heat. Add garlic, spring onions and dried shrimp. Stir fry for 30 seconds, or until fragrant.
    5. Add carrot and shiitake mushrooms. Stir fry for 1 minute.
    6. Add cabbage. Stir fry 2 minutes 30 seconds.
    7. Add spring onion green part, cooked egg, soaked glass noodles and seasoning. Stir fry until glass noodles are coated with seasoning and all ingredients are mixed well. Add some water if the glass noodles dry up fast. Adjust the seasoning accordingly.
    8. Serve on a plate, garnish with more spring onions, enjoy!

    Tips:
    1. For easy handling, some people like to cut up their soaked glass noodles before stir-frying it.
    2. If you replace eggs with meat strips, you can marinade them in soy sauce and white pepper powder. Or simply top up with stir fry chicken or beef strips.
    3. Great for meal prep as the glass noodles retain the springy and chewy texture after reheating.
