I love German pickles. I bought some recently at Aldi and can't wait to have them for lunch today. I like that I can find German food in the US at Aldi. These salads look great. Thank for all the cooking ideas.

Marta, you had me at the German beef rolls. I got into pickling this summer, but here in New England, the cucumber growing season was stunted, due to the drought. but I did pickle some green bell peppers, reusing brine from a friend's pickled asparagus. I got inspiration from you to maybe try and make beef rolls with the pickled peppers.

Evening Marta, you've got me drooling again. I never thought of pickling my own Gherkins but now I'm thinking about it, we do eat them a lot and I use them a lot in cooking. Those dishes make me homesick, but we are off to Hamburg in just under two weeks, we can't wait, I'm so excited. Lidl do an excellent Polish Gherkins, they have garlic and Krauter, we really like them, sounds a lot like that method you showed.

That is alot of Essigurke this week! I would choose the sausage salad. If I ever fly to Frankfurt, I will surprise you with an alias on your food tour (And bring gifts for Max, and maybe some of the cooking utensils I have promised! )

And what an amazing video!Being Polish, have you observed whether in Poland some of the types of pickles you mentioned are more or less popular than here in Germany? Also, what is your favorite type of pickle?

And lastly, could you maybe please post a video where you really give recipes of each of these pickles? I love pickles, but I somehow never dare to try to do them myself… If you made a video about how to make them, it might give me the knowledge and motivation to finally try it myself 😉

A word of warning to those in the US who want to make any of these dishes. Day before yesterday I made fleischsalat. (The bologna and mayo salad.) I made the mistake and forgot how salty US pickles are. (Like 2x saltier than German.) So, if you want to use US pickles in cooking, don't use pickles from the shelf-stable chemical pickling, rather use from the fermentation pickling method. Same goes for Germans who want to eat a lower sodium diet.

YUM! one of my favorites! i LOVE pickles! i kind of wish there was a little more "how to" on how to make them though. while i have a lot of experience with lacto fermentation, i'm not so experienced with using vinegar, for example. still this is an excellent guide on getting started. i now know more about what i don't know, lol!

Love slightly lacto fermented pickles, not sweet neither too tart. They are great alone or in salads. Bread and Butter pickles are also good but sometimes too sweet. One rare pickle, is the red hot cinnamon pickle which was popular before the 1960s and less popular afterwards.

I love hot pickles, basic pickles brined with hot peppers. I also like hot sweet pickles. I also like pickled green beans, asparagus, and artichoke hearts. You should try them some time. My favorite brand is called Wickles. Short for wicked pickles.
