    Dildo, I mean Dido! I also would like to see the resting oven. I our a 42"stack on my pecos smoker. Works pretty dang good. I figured I'd learn how to offset on a cheap model so now it only gets better with steel thickness

    How do you cut through your briskets so easily when trimming? I try to pop mine in the freezer for a bit before I trim, go with the grain, but still get caught up. Have a review on cutlery/care? What knife/sharpening tools do you use and how/how frequently do you sharpen them?
