    Cheese is vegetarian, but not vegan. You did a great job. Well done ! Have you thought about getting a bread machine? Perfect for when you run out of store bought, you can make a loaf with little effort for pennies. 🤗🍃🍂💐💗✝

    Hi Claire nice meals I usually use sliced tomatoes if any left on my cheese onion mash to decorate but I like the taste .or sliced tomatoes if I make a veg lasagneyour kitchen always looks so pristine lovely and clean Claire hope your well x

    When I have extra tomatoes, I slice them up on the thin side, layer them with breadcrumbs, cheese, and seasonings, and bake. It makes a tasty side dish and any leftovers can be refrigerated or frozen. Use whatever cheeses you have on hand.

    I really wish I could be as focused and organised as you…I'm so used to having fully stocked cupboards it makes me nervous seeing them being run down. I'm going to attempt a low-spend week this week (it's a start) 😃

    Oh dear, what was the vet bill like? I think they are extortionate these days. They haven’t rose in accordance to wages I’m sure. Apparently in Spain pet insurance isn’t really a thing as the vet bills are really cheap. 😐

    I ❤️your meal plan this week. Here in Australia 🇦🇺🇦🇺we are still in winter so my meal plan this week for the cold weather. Start from Saturday Greek restaurant out (birthday celebrate)-Lamb Shank & veggie soup- oven baked pork sausage with mashed potato & veggie with onion gravy- Thai chicken fried rice- roast chicken with mixed roast veggies- leftovers- homemade pizza with two ingredients dough ( flour & yogurt). Thanks for sharing your challenge 💯👍

    Try putting your tomatoes,garlic and red onions all diced up with black pepper and salt , balsamic vinager and olive oil all together till all the juices mix together , then spread on toast crusty of ciabatta, OMG so gorgeous and healthy xxx

    Completely agree about the fruit. I’m not much of a fruit eater, but Hubble loves it! Saying that, it was about the only thing we were wasting. So instead of buying big packs of fruit, we now just get couple of bananas and apples, or pears, and no waste! Well done on meal planning, everything looks yummy! Thanks for sharing.

    I hope your little dog will feel brighter soon. I can remember cooking chicken/rice for my own dog after a dental ❤️.

    I have started my own pantry/freezer challenge! I will be a week behind you.
    I have done a written inventory of ALL the food in my cupboards & 4 drawer freezer so I know what, & how much food I have. I've brought all my tins out & put them on my bookcase so I can see them. I have 15 tins of tomatoes, 8 cans hot dog sausage, 7 tins soup, 9 home-made frozen meals for tea's etc etc etc 🤦‍♀️. Lots of tinned veg & tinned fruit. I have told myself I am not allowed to the shops until at least 02/09 IF I even have to go then. I am feeling quite excited, I have to admit. Look forward to your video next week x

    Claire..do you usually have a tube of tomato concentrate knocking around..if so try this.. squeeze approximately 3 generous tablespoons into a pan..add a small amount of oil and cook through for a couple of minutes..add water till the desired thickness..then add seasoning to taste..garlic/herbs/salt and pepper..makes a gorgeous sauce..out of next to nothing..thanks for the vlog..💐

    That amount spent is really reasonable . I’m going to steal your idea of roasted fennel and other vegs , that should be a lovely meal . When I have sad looking tomatoes I finely dice a garlic clove , roast it a little in olive oil in a non stick pan , then add the cut up tomatoes (small chunks ) let them cook for 10 min on low then break 2 eggs on top , salt , pepper , cover and cook for 3 to 4 min . Lovely lunch for one with a slice of toasted bread .
