    Hola Kirby…. Perfection! This is a great way to make beans. The flavor is unbelievable. I used poblano and jalapeño peppers. For my meat, I added Oscar Meyer beef hot dogs and ham too….. 😋I ate my beans with rice and jalapeño cornbread. I like your red cast iron/enamel Dutch oven cookware.     Nice! I made your beans the other day when you posted it. Really good. I've got 6 quarts waiting in the fridge.
    I used Peruvian beans which we love. We like pintos too but the Peruvian beans are creamier, they make great refries. My local market does have pork chorizo at the butcher counter that is really good.
    I have had trouble finding Mexican oregano. I've checked a couple of Mexican markets, I'll track it down. I'm wondering if the oregano in the Mexican spice section, in the little cello bags, is actually Mexican oregano. It just says Oregano.
